Got curious, as we are talking about Evolution _and_ Mandrake. ;-)
I just installed evolution-1.2.4-mdk and tested again:
Receiving Mail Server: None
Sent folder: "Sent" in <imap-account>
Fired up a mail and found the message in my custom set Sent folder. So
working as expected even in the Mandrake Evolution 1.2.4 version.
The culprit has to be on your local system.
