Use a tar archive, or you will loose restrictive file permissions and
make your files readable to the world...
Since Evolution 1.3.x you will need more than just the ~/evolution
directory. The settings are stored using GConf and therefore you should
backup ~/.gconf/apps/evolution/ too.
