Better:

egrep -vi '((Message-ID)|(References)|(X-Evolution-Source))\:' 
~/evolution/local/Inbox/mbox | perl -ne 'print "$1\n" while ( 
s/([\w.-]+@([\w-]+\.)+\w{2,})// )

Still by no means perfect.
