No there isn't any online tutorial, perhaps there should be.

Email is fine, just copy the entire evolution directory to the new
username.

Filters you will need to edit ~/evolution/filters.xml and fix any
references to the old username.

Accounts - it dpeends on which version of evolution you're using.  With
1.4.x you can just copy the gconf stuff across (in
~/.gconf/apps/evolution - shutdown gconf first though).  Again, any
references to the username can be changed.

We plan to make 2.0 not store anything using absolute paths including
the username, or at least not normal things.
