You can add a "Received" column and sort by that. Right-click any one of the column headers, select "Add a Column" and drag it to where you want it. I remember it didn't used to always work (sometimes the date wasn't set?), but haven't tried it in quite a few versions of Evolution. I just turned it on and it looks OK now.
