well...except the customised toolbar buttons which is sorta doable in both 1.4 and 1.5 by editing /usr/share/evolution/1.4/ui/*.xml
if there is a gnome app that lets you modify bonobo-ui menus/toolbars, then you could use that too. I know there was talk of writing one at one point by the gnome hackers, but I don't know what ever came of it. a menu editor is definetely out of scope for the evolution project tho... especially since it seems likely that other apps would also like to have that functionality.
