Start up gconf-editor. Expand into apps->evolution->mail and look for the key signatures. Double click on it and it will open a dialog that will allow you to remove signature entries. Although using any of the many "autogenerated" signatures looks the same, the XML entries all have a different UID entry. So, the changing UID must be session related and that is causing the new entries.
