It actually sounds like the calendar/tasks/etc 'sources' are lost. Email just uses the physical files to keep track of all local folders - calendar/tasks/addressbook uses some data stored in gconf.
So the gconf entries are the problem, if you don't mind resetting everything to empty you can just remove all of /apps/evolution from gconf, that should then treat it as a fresh install. If you need to keep your old data, then things get a little harder, and I dont really know the format of the xml entries you need.
