You need add your public contacts folder to favorites and go to contacts view to see the contacts.

Have You tried using the Exchange connector instead of IMAP? Just did the switch myself and all is alot easier now. Evolution does not recognise the entries as contacts, but as "IMAP mail" when they are stored in public folders of an Exchange server.
