I'm guessing the GNOME setting will define just what application to use. You'll also need to set the Firefox preference to tell Firefox how to handle it.

Under Preferences in the GNOME main menu from the panel, there is an entry for default applications. Listed are terminal, web browser and mail application. I believe Evolution uses the program specified there. I have "epiphany -n %s" which opens a new tab in Epiphany from Evolution.
