I guess I'll jump in here, since I used to ask about this sort of thing long ago. I *hate* the idea of using a word processor to compose mail, but I guess it takes all sorts. What I want to do is to use Emacs. I can do this in Kmail (it has a clumsy but functional hook mechanism).
