evolution stores your data in "$HOME/.evolution/", your account settings
in "$HOME/.gconf/apps/evolution" and your passwords in
"$HOME/.gnome2_private/Evolution". as far as i know, they are not
encrypted, just base64 encoded.

for your interest: for automated setting of multiple evolution
deployments, Evolution GConf Tools were written. You can get the tarball
at http://people.redhat.com/dmalcolm/evolution-gconf-tools, also see
http://live.gnome.org/Evolution_2fGConfTools for more information.
