Font configuration should be done in the HTML Viewer capplet in the gnome control center[1]. The editor supports XIM[2] but I don't know enough about XIM to tell you what to do to get it working. I've not been able to find much english documentation about setting up an XIM testbed.
--Larry 1. To get fonts working properly for japanese it is possible that you might need to edit ~/gnome/gtkhtml by hand and put a list of fonts that make up a fontset there. Make sure you specify both fixed and variable fonts. Let me know if this is the case. 2. There is a know bug regarding the preedit possition with a patch waiting till 1.0.x to go in.
