UW imapd has a *really* unhelpful default configuration.

When you configure the account, you either want to leave "Show only
subscribed folders" checked (telling it to not suck in your entire
homedir), or check "Override server-supplied folder namespace" and give
it the name of the subdir of your homedir that you want it to look in
for folders.

We're working on a fix for Evo 1.2 to make it give up after a while.
