You get the chance to point Evolution at the Drafts and Sent folders on
the IMAP server, so you can point them to whatever Pine mailboxes were
setup.

There's no batch-installation support built into Evolution, but I don't
see why you couldn't just copy a template evolution/ directory into each
user's $HOME.

You could even look into changing $prefix/share/evolution/default_user/
which is what Evolution copies into the user's $HOME on first
invokation. This way when you add new users and they startup Evolution,
they get the config files auto-magically.
