Every Linux distro comes with an SMTP server (generally sendmail) and a POP3 and/or IMAP server. In fact, Evolution uses IMAP to talk to Exchange server (unless you buy the Ximian add-on), and it uses SMTP for outgoing mail. All you need to do is setup an Internet standard mail server and you can use Evolution or any other standard mail client: Netscape, Eudora, Outlook Express, Outlook (Internet Mail mode), Mozilla, mutt, pine, fetchmail, etc. If you really only need mail services, and not the workgroup stuff that Exchange provides, then Exchange Server is probably a waste of money.
