because it would look ugly as sin. and 99.99999999999% of the people using Evolution wouldn't even use it most of the time so you just end up: 1. cluttering the UI 2. confusing users who now have to type their name/email (or, at the very least, selected it via a GtkCombo) every damn time along with specifying the SMTP server to use. Sounds like a PITA to use IMNSHO. If you want it, you can implement it in your own version of evolution, but I don't see us ever accepting a patch for this.
