I think the problem is not evolution, but galeon, which AFAIK does not support displaying Bonobo components. Nautilus does, so if you try to open that kind of files in nautilus, it should open the Bonobo component for it. Although it's not very useful, since it just lets you accept/decline a meeting invitation.
