In the new version of evolution (1.2) i believe you can run "external
programs" from filters, so you would need to: 

  * Setup a filter that ran all mail via an external 
    program (namely spamassasin)

  * Filter based on the results (i filter on the subject 
    containing *** SPAM ***) but filtering on the 'X-Spam-Flag: YES'
    is probably a better idea...
