Basically, you don't use Evolution. There are some conduits that are shipped with evolution for gnome-pilot to allow sync of contacts, meetings, tasks etc with what you have in Evolution but that's it.
Some linux distros would include the *GNOME* conduit for installing a file (RedHat seems to have excluded this in 8.0 that I can see) and the kind folks at Ximian also include this conduit (being of GNOME). Which distro do you have? Are you using Ximian GNOME or your distro's GNOME (if not Ximian)?
