I've seen SANs deployed improperly plenty of times. If you load the SAN with lots of drives (fill it up) and then virtualize the storage across all drives, and the SAN is shared with other applications that have different usage characteristics than Exchange, you will probably have a good experience. If you carve up the SAN into separate physical chunks, with each application getting its own dedicated drives, you'll probably either spend way too much money (which you'll likely do with SAN anyway unless you have a good reason for it) or you'll end up with poor performance.
