Unless you leave the old computer up for a window of time to redirect your Outlook clients, and simply move your mailboxes to the new Exchange 5.5 server - the 'new computer same hostname' route is the easiest. However, you need to be comfortable with restoring your DB's to new hardware to pull off a "new computer same hostname" migration.
If your not confident with a DB restore to new hardware, I would recommend a new server added to your existing Org and Site and simply move mailboxes. Then leave the old server up for a couple of weeks (this length of time depends on how many Outlook clients are in yor environment) so that the clients can be automatically redirected to the new server.
