Don't invite people from the resource, have an actual user do the inviting (even if you make it a "dummy" account just for that purpose).
Or use a resource mailbox instead of a public folder? It's a touch less visible in some cases since PF's are so easy to see as a group, but it's the only supported way of tracking the attendance correctly.
