If your old Exchange server was a Domain Controller use ntdsutil:
http://support.microsoft.com/default.aspx?kbid=216498

If not just use ADSIEdit:
1. Expand your domain NC container
2. Expand DC=your domain, DC=COM, PRI, LOCAL, NET.
3. Expand the OU that the computer account is in
4. Select the old Exchange server, right-click, and delete
