My understanding is that unless they're using VSS with Exchange 2003 that snapshot backups are unsupported by Microsoft. In the past, many SAN vendors would tout that they could snap Exchange, but I remain skeptical that you can reliably restore from it.
I recommend that unless you have a supported solution, you run a standard backup to a SAN disk and take a snapshot of the backup file.
