The only way it would be useful would be if you were doing it so that you could quickly restore the exact same image in the same domain into the same hardware.

You can ghost the Windows part, subject to SID walker, etc., but most of an Exchange installation is made to Active Directory, and obviously you can't ghost that. You can, however, create an unattended installation of Exchange 2003 and service packs, and I've developed scripts to automatically build storage groups and stores.
