I think maybe you meant resource fork, which was a standard part of
the old MacOS file structure...but I never would've guessed that would
be relevant. Maybe it was the TEXT file type code that was necessary?

Finally resolved....in case anyone else is interested

The problem was the hosts file, however it was something I have never
heard
of...

Apparently OS 9 classic requires certain data called a "source forge
(sp?)"
to be embedded into the hosts file.  This data is only embedded if the
file
is created or modified within OS 9 as OS 10 and PCs do not embed this
data.

We created a new host file in simple text program in os 9 classic with
the
new exchange server info and Outlook 2001 could finally see the new
server.

Thanks everyone again for your input, thought I might finally send a
solution to this list :)

One other question, you mentioned that OS X does not use a hosts file,

With Mac OS X you do not see a connection to the network.  The user
simply
logs on to the Mac itself and then "logs in" to other services such as
Windows Shares and, in this case, Outlook.

You can ping the MS Exchange server by bringing up a Terminal session.
To
do this:

1) Double click on the Hard drive icon
2) Double click on the Applications folder
3) dc on the Utilities folder
4) dc on Terminal.

>From Terminal you can ping the exchange server, or at least should be
able
to.  Think of it as the Mac's DOS prompt.

If you can ping the server from there then that is half the battle.

When Outlook is launched the OS 9 is launched as well.  If the current
profile is not working then what I wold do is the following:

1) Launch System Preferences and verify the DNS settings for your site
(it
sounds like you have already done this.  OS X actually does not need a
hosts
file.

2) One thing you can also do is put the IP address of the Exchange
server
the user is assigned to into the MS Exchange Server field and then run
the
Profile Tester routine.

3) As for the stay connected or not I tend to leave it as stay
connected
when it is launched.  Also make sure the protocol that Outlook is
using is
the TCPIP instead of the Appletalk. 

This should give you enough to play with for a bit.  Let me know how
things
go.

I have done this and, in fact, do this at work.  I currently use a Mac
Powerbook on our corporate network and have connected to both Exchange
5.5
and Exchange 2003 servers using Outlook 2001 and Entourage 2004.

A couple of questions.

1) You say that DNS is okay.  Can you ping the Exchange server from
the Mac?

2) What version of the Mac OS is being used?

Do any of you have the distinct pleasure of supporting MACs on your PC
network?  If so, can you point me to some resources?

I have 5 macs on my mixed 2000/NT network.  After moving the mailbox
for one
MAC user, her Outlook 2001 client could not locate the new exchange
5.5
server.  We updated her host files since she is in a remote location
and
that has sometimes been necessary but that did not work.  Everyone on
a PC
at that same remote location was able to see the new exchange server
once we
updated their host files.  So the problem seems to be with the MAC,
and her
DNS settings were correct.

I decided to try and troubleshoot the problem on a MAC locally, and on
this
MAC I cannot see either of the exchange servers.  Again, DNS settings
check
out, hosts files updated.

I am sure this problem has to do with a lack of my understanding of
networking MACs into a PC network, I have thus far succeeded at
creating
apple talk shares for file sharing and that is pretty much it.  

I certainly wouldn't expect anyone to try and teach me the ways of
mac/pc
networking, but if anyone can point me in the direction of resources
that
were helpful to them, while administering exchange server and
supporting mac
clients, that would be great!
