Why are these servers not in the same org? Or better yet, why if the migration is just beginning and must cross orgs are you not using Exchange 2003 SP1 which supports such moves so much better?
Yes, you'll need to add an x500 address which matches the Exchange DN of the original mailbox in order not to break replies.
