Where do you see Plain text in the contact?  I created one but I only
see Rich Text as on option.

Have the sender configure his recipient object (contact) for his
correspondent to always use plain text.  Or, if addressing the recipient
manually by SMTP address, after it's underlined right-click it, select
Properties, and change the format there.  Of course, creating an Outlook
contact is easier because he has to do it but once.

All,

We have a user who is sending messages to an outside client but the
outside
client cannot view MIME encoded messages.  So my question is on the
Global
Settings in the Internet Mail Formats.  On the advanced tab there is an
option for Rich Text Format.  Currently we have it set to "none".  If I
set
this to "Determined by individual user settings" will that help the
outside
customer view our email that is being sent to them?  The catch is that
these
emails that we are sending our being sent from a program that relays off
our
Exchange server to this outside person.  If I'm totally off base here
let me
know what direction I need to be going in to get this to work.
