Stupidly I forgot to leave out the most important detail. I had moved about 30 mailboxes off that storage group the weekend before and the resulting fragmentation was the cause of performance problems.
I defragged manually and it fixed everything. However, I'm still curious about the store.exe process only taking 1GB memory footprint. Is there some tuning I should be doing to take advantage of the extra RAM?
