This question is basically about how to remove the first of two exchange
2003 servers in a basic environment.

I was dumb and bought a very cheap server running SBS 2003 for a client
with 12 users, no problems until they tripled to about 40 users now.
Anyway, I had to move them to new hardware this past weekend.  The
hardware was do different that the backup would not restore to the new
server  I looked at many methods, "swing" method, "hardware shove"
etc...  

What I did was:

Install Windows 2003 on the new server, patch, etc,,
Ran dcpromo, transferred all 5 roles and made it a global catalog
server.  
Installed and configured DHCP and DNS on the new server.
Verified all accounts copied over successfully and AD was synchronized.
The new server has a different name then the old one so I changed the MX
records for .com and org to point to the new servers FQDN.  No problems
there.  Also changed the firewall to forward port 25, 80, and the other
ports that OWA needs to the new internal IP of the new server.
I moved all the mailboxes from the old server to the new server, no
problems.  I've never moved mailboxes between servers but when I went to
a few clients and launched outlook 2003 and it went right in, picking up
the new server; pretty cool.  I had to change the one pc with outlook
2000, it didn't automatically pick up the new server name.  

I've only worked in single server enviornments and don't have any
experience about mail routing between servers.   It seems that the old
server is still being used to actually send mail in some way.  

Received: from main.njslom.com  (HELO league.NJSLOM.local)
(65.210.42.102)  I don't know why the header says Received: from main
(old server) when it should be the new server name - league.  

Also, a DNS report is saying that the HELO statement doesn't match the
MX record and there may be some problems sending mail.  How do I fix
that?  

Sorry for the long post but does anyone have any advice about the
routing and the HELO statement?  I have to pull the old server in 6 days
and I'm worried that it will break if I do.  MS only gives 7 days for
two SBS's to be up at the same time.
