Greg - Our office, along with a few of our customers have a NetApp-Exchange 2000/2003 solution over iSCSI. We've been pretty happy with the performance and Snap capability. Haven't tried any mailbox restores as there hasn't been a need. One hint for the iSCSI is to have it on it's own VLAN separate from production (although it is working in a few sites without that need).
