I've used message reporting tools for this in the past. Keeping track of mailboxes which have not sent any mail in the last n weeks. It's kind of imperfect, as resource mailboxes often receive mail but don't send. However, it was ok for my purposes. You could also write a script to check last mailbox logon every n minutes and specifically exclude updating the record for any account where the last logon is recorded as this service account....potentially.
