Just because I'm bored, waiting for a MOM agent install to finish, I'll
share that I did recently hear about an issue with an A/V package that was
stuffing up the STM file because it (the A/V) was misconfigured.

If you are really gung ho to reduce it: 

1) delete a ton of messages, wait till deleted item retention and IS
maintenance runs and do an offline defrag to shrink both the edb and stm
files.
2) Have every user modify all their messages, thus moving them into the rich
store, which will grow, then do an offline defrag to shrink the stm after
maintenance runs.
3) Move every mailbox to another store, thus moving every message into the
rich store, which is now much bigger, later do an offline defrag -
hopefully, temporarily, shrinking the stm.

Unless this the Standard edition, I don't see the point of worrying about it
actually.

On a server that is doing heavy SMTP/OWA/POP3/IMAP and not much MAPI Oulook,
I would expect the STM file to be larger than the EDB.

If someone sends a lot of internet mail messages then it will grow.
Did you already ran a full backup?

Running defrag will only release the white space, i.e. space that will be
available after running defrag.
So this will not solve the growing of your STM file.

Before you run defragmention look in your application log for event 1221,
there will be one event for each store (private/public) In there you'll find
the "white space" mentioned
