Somebody's sure to object to how we do stuff, but here goes. We're a nonprofit, also. To maximize the disk space available and keep the system separate, we RAID-5 the whole server, have a 10 GB partition for the System, the rest for everything else. We install Exchange on the "everything else" part.
Sure, the performance isn't what you'd get if you separated the stores and transaction logs. But, I did all that on my first Exchange server, and it didn't seem to make a lot of difference, with only a couple hundred users on one box. The hardware is so fast (DL 380, 2GB RAM) that, for us at least, it just doesn't seem to matter. Again, for us, it is *very* important to have the System files on a separate partition, with no logs of any kind (Backup Exec, especially) being written to the System partition.
