My understanding, please correct me if I am wrong, is that the *.nk2
files (on the user's machine) is the Outlook addressing (quick-type,
auto-filler whatever you call that "feature") cache.

When we migrated our users from "an un-named older yet superior
technology" to Exchange 2003 we deleted the CONTACT data we had created
for them in the GAL. Exchange auto-magically created their new entries
in the GAL and life is Good if people pull the addresses from THE GAL
listing.

If, however, they go with the data that pops up when they start to
address an email (i.e. I type "Eddie" and "Eddie Albert" automatically
pops up in the address box) the information contained in that cached
data is the OLD contact email address on the old system, not their new
data on exchange and the email bounces back.
