I am not sure if this is what you mean but, if you double click on the
recipient that you want in the Exchange Administrator, then go to "email
addresses" you can add or remove smtp aliases.

My boss is leaving us and asked me to stop redirecting email from other
addresses to him, including the default system email address... We use
Exchange 5.5 and I've looked all through that and can't seem to find where
the default addresses are configured... Can someone point me in the right
direction? I've found the help section where it talks about it, but I can't
seem to make heads or tails out of that.

I promise I did look all through Exchange Administrator... so maybe I'm not
looking in the right section.
