Even NTBACKUP can do a pretty quick job of backing up and restoring 35GB

What is it if you have 200 stores each over 35GB?

That's a rather broad generalization.

Restoration of a 35GB database falls well within the established SLAs
for many of my customers. It's possible to get some quite respectable
restore speeds these days.

Hmm... My users average almost 10x your generous limits. I have several
customers with averages of 1GB or more.

That's simply false. E-mail (message+ attachment) constitutes a document
record. So for many organizations saving them separately is at best
difficult and unproductive. While there are steps that many
organizations can take to institute best practices surrounding e-mail,
your database design and messaging size limits are, I think, a bit
dated.
