I would of thought the fibre channel card/network would be the limiting
factor in terms of speed??

As I understand it one major difference between EMC and EVA is how they
handle disk groups and how the physical disk spindles are written too
and distributed within those disk groups.  The EVA allows you to create
massive disk groups comprising of as many disks as your array will
handle, and the larger the better in terms of Disk IO.  I also
understand many of the SAN solutions handle RAID and VRAID differently
and performance can be increased vs. decreased by the amount of disks,
depending on what SAN solution you go with.
