Yes, but if you design it right, it could die and someone could restore mail flow in a matter of minutes. We run a similar setup (Linux+SA forwarding to an Exchange box). The Linux box is the lowest cost MX, the Exchange box is highest and is blocked by the firewall. If my Linux box dies, all I need do is open up SMTP connections to the Exchange box from the firewall. If a sending server can't contact the lowest cost MX, it will retry to the next lowest cost (the Exchange box). Trend on the Exchange box will take care of the viruses, so my users would just need to put up with spam for a few days until I get back in town. My admin time on this box is actually shorter than on my Windows boxes. Very little patching or tweaking, and daily log scanning is made much easier with logwatch. Look me less than a day to set it up, but then I know what I'm doing, you may have a learning curve.
You're going to have to do the same thing with an appliance anyway, so what's the difference? You may be the only one on site who can fix it, but isn't that what they pay you for anyway?
