We've been using HTML as our outgoing default for a while now, and I haven't had any reports of problems. Also, SpamAssassin is going to hit you more for mal-formed HTML mail and certain tags. HTML mail is very common these days, and the SA team checks their rules against a corpus of mail for the purposes of calculating scores. If a certain percentage of HTML tags hits against the ham corpus, the rule's score is usually reduced to 0 or 0.1.
The only thing I would recommend is to disable using Word as the mail editor. The HTML that Word produces will likely cause you false positives.
