Is it possible that mailbox store is not showing all the mailboxes? Is the size of priv1.stm file normal?

Performed offline defrag and brought it down from 15GB to about 12GB. In just 2 days store has grown by 250MB without any mailbox activity. While the mailbox store is about 12GB, the total of priv.edb & pub.edb are only about 8GB. The priv1.stm is about 4GB. There are mailbox limits and Backups are running fine. What could be the cause of this and how can it be stopped/fixed?
