You could get into more complicated scripting and use exmerge.ini file that would export only from this date to that date...

Anyways, Why not script exmerge to extract the mailboxes to PST ? That's how I have my Exchange 2003 server setup. Every night the script runs and has Exmerge copy all the mailboxes to pst.
