You might consider backing up to disk, then backing up the disk to tape. The disk-to-tape backup won't consume a lot of resources on your Exchange server if the backup disk is a different physical volume than the Exchange databases, so you would be able to run it anytime. After backing up the backup file, you can delete it. You shouldn't need to keep more than one backup on disk.
How many backups you keep is really dependent on your information retention policies. What's just as important is that you practice restores periodically so you know that they'll work and you know how to do them. I don't know if we have tapes, but maybe I can back up to the on-board RAID and then move that to another server and keep 2-3 days' worth there. I'm going to TRY to keep a weeks' worth of backups, but I don't know if I can do it, what with the "mdbdata" folder being 46GB (I know...
