Virtual every tool for gathering stats basis its information on the message tracking logs. Therefore if you don't have message tracking turned on, then get it turned on.
You may get away with the eval period of something like Quest Message Stats or Mail Detective to generate the information that you need. If you are any good with Access, then Promodag have a tool to covert the logs in to a database, which you can then run reports from.
