Do you have Message Tracking turned on? That's one way. Message headers are only good for addresses in To: or Cc: field.
There's ways to search through Exchange mailboxes using Exmerge.... If you used an External gateway such as Unix/Linux/Windows(not Exchange) SMTP Gateway or some type of Appliance/service, you can go through their logs. If you had SMTP Event logging turned on, that's another way. Third Party compliancy tools that will search mailboxes.
