Do you have Message Tracking turned on?  That's one way.

Message headers are only good for addresses in To: or Cc: field.

There's ways to search through Exchange mailboxes using Exmerge....

If you used an External gateway such as Unix/Linux/Windows(not Exchange)
SMTP Gateway or some type of Appliance/service, you can go through their
logs.  

If you had SMTP Event logging turned on, that's another way.

Third Party compliancy tools that will search mailboxes.

If you were using Exchange 2007, you can search the information store
with PowerShell.
