Can you try setting her up on another machine (so a new Windows profile gets created) and see if the message has the strike throughs? I've seen more problems tied to corrupted/weird Windows Profiles lately. Or just sign her on locally on the same machine so she is using a different Windows profile and have her authenticate through Outlook temporarily. If it works, then you can go from there about examining her setup or resetting the profile.
