While this is true on messages originating from the Internet (or other non-organizational smtp server) email that stays within an organization will have no visible header in this fashion.

This will show you all mail servers the message has been through (this information could be forged, i.e. spamming, but that's another story) When you forward the message on, then these headers are stripped If you forward the message on as an attachment (.msg file) then these headers will be retained.
