EAS and OMA are two different, but related things. OMA is a plain text version of OWA. You can access it via http://host.domain.com/oma and enter domain\username and password. EAS is the sync.
Unfortunately it will be enabled on all users by default. For existing users you can use admodify.net to change them in bulk (download from the same URL). For new users you will have to turn the option off unless you are using a template account.
