I just migrated to 07 over New Year's. Generally went well -- just a few
stubbed toes.
I see no reason to create the user on 07 and move him back and forth. I'd
treat him just like an incumbent, especially since he's all-OWA, and that
has certainly been one of the bigger stubbed toes.
Speaking of which, one of the biggest and most hidden gotchas of migrating
to 07 is that you lose your Dumpster. Make sure your users know that well
in advance.

Moving from 2003 to 2007 as we speak (or write). I have my 2007 servers in
place, CAS, a hub and two mailbox servers. All my users are still on the
2003 box (except me). I am testing and moving carefully.

2007 box because OWA is not moved over yet and not published in ISA yet. And
this will be an OWA user only. How should I make the mailbox?
Make the user, add the mailbox in 2007 and then move it to the 2003 server?
